| Barbecue Buffalo Ribs with Merlot BBQ Sauce |

| 2 Racks of Buffalo Ribs ( appox. 4 Pounds ) Season Ribs with Salt, Ground Black Pepper, and coarse Garlic Powder. Place ribs meat side up on roasting pan. Bake in preheated (375 F.) oven for 30 minutes. Reduce oven to (325 F.) and bake for another 30 minutes. After the ribs have baked for a total time of 1 hour, baste with BBQ Sauce for the first time. Baste twice more at 10 minute intervals. Total cooking time is 1 1/2 hours. |

| Merlot BBQ Sauce | ||||||||||||||||||
| 2/3 cup of Catsup 1/4 cup of Brown Sugar 2 Tbsp. Red Wine 1/2 Tsp. Salt 2 Tbsp. Worcestershire 1/4 or 1/2 Tsp. Tabasco 1 Tbsp. Cider Vinegar 2 Tsp. Dry Powdered Mustard 2 Tsp. Chili Powder 1 Tsp. Nutmeg |

| Combine all ingredients in a medium size bowl. (yield about 1 1/4 cups of sauce) |

| " The Best Buffalo Burger " | ||||||||||||||||||
| 1 Pound of ground Buffalo 1/2 Teaspoon Onion Powder 1 Teaspoon Johnny's Seasoning 1 Dash of Garlic Powder 1 Dash of Ground Black Pepper In a medium size bowl mix all of the ingredients together well. Form into patties, broil or grill on medium heat until browned on both sides. Top with cheddar cheese. Grill until melted. Salt to taste and serve ! Delicious |
